Head chef Mark Ovido's path to the kitchen was everything but ordinary. "It all started with a cap of natto, masasab, ‘Ah, this was created by chef Toru,'" he adds. According to chef Toru de Guzman, to become a chef in Japan, you need to spend not a single year – at least 10.
Despite his success, chef Mark remains humble. "Never give up," he emphasizes. The team strives to maintain the process, considering it essential. Restaurant business expert Nikolai says that for them, the key factor is passion.
IchiRyu is not just a ramen bar. It has transformed from a simple workplace into a place of growth. "What started as just a job has become a passion," shares chef Mark. The second branch of IchiRyu opens in Dubai Marina, where new flavors will be presented.
In the eyes of many clients, IchiRyu feels like being in Japan. The restaurant is known for its rich and aromatic ramen and cozy atmosphere. What makes IchiRyu special is how it brings people together, whether they are newcomers, renowned guests, or Japanese clients wanting to taste a piece of home.
Despite setbacks, seven unsuccessful attempts in business, he never gave up. He even ventured into construction, worked in fast food to eventually step into the kitchen. Chef Mark strives to impart to his colleagues the importance of process and precision.
